This post should also be called “Some Food Just Isn’t Pretty to Photograph But It Tastes Delicious”. Actually the title really should be called Purple Sprouting Broccoli Pasta with Avocado Sauce and Herby Crumbs, but it was just such a long title that I left off the crumbs, but trust me- these really do bring the dish together and are an invaluable pasta topping.
Purple Sprouting Broccoli is in season right now, and I couldn’t go past it when I was nosing around Borough Market. It was so pretty, those deep purple florets peeping out from behind their little leaves all piled up. It’s quite a versatile vegetable that is great in stir fries, and steamed with tahini dressing or in a fritatta, but I was craving pasta. Comforting, carby pasta.
I also had an excess of avocadoes due to over-enthusiastic market purchasing, that really needed to be eaten before they went brown and stringy. And, I had seen somewhere on Pinterest, or Instagram, both of with which I have an unhealthy obsession, avocadoes used in place of a creamy sauce.
In typical fashion however, I didn’t bother actually go looking for the recipe that I had read, I just set out to recreate it in my own way.
And.. do you know what? It worked. Even if it wasn’t particularly pretty.

What’s your favourite ugly but delicious dish?
- 1 cup purple sprouting Broccoli - chopped into florets
- 1 cup /mug dry pasta
- 1 large Avocado ( or 2 teeny ones that we sometimes get at the market)
- Juice 1/4 lemon
- 1/2 clove garlic
- Sprinkle salt , pepper & olive oil to blend
- For the Herby Breadcrumbs
- 1 cup panko breadcrumbs
- 1 tsp oregano
- 3-4 sprigs fresh thyme , or 1 tsp dried
- 1 tsp mild chilli
- smidge of salt and olive oil
Put on a big pot of salted water to boil.
Add the pasta, and when there is around 5 mins until it's ready, add the broccoli.
Meanwhile, make the Avocado Sauce.
Either whizz together all the ingerdients in a blitzy whizzer, or finely chop the garlic & pound everything together in a mortar & pestal, or if you have none of these, super finely chop the garlic & use a potato masher to mash the ingredients into a mush. You're aiming for a finely blended sauce.
For the Herby Breadcrumbs
Dump all the ingredients into a frypan.
Toast until toasty.
Mix the pasta and broccoli in with the avocado sauce until combined.
Serve with the herby breadcrumbs on top.
You will probably have more herby breadcrumbs than you will use. Store in an airtight container and use in any pasta dish you would use parmesan. Yummy!
