Roasted Harissa Parsnips & Cauliflower with Tahini Dressing

Roasted Parsnips and Cauliflower with Harissa 2So- as I’ve mentioned in earlier posts,  I love harissa… and I also have a glut of parsnips, & I also love oven roasted cauliflower.

So… I thought that i would combine the 3 ingredients & see what happens.

Magic. That’s what happens.

We scoffed the oven roasted parsnips wedges and cauliflower coated in harissa goodness in minutes. I made a little tahini dressing & green beans in garlicky oil whilst I impatiently waited for the oven to do its bit, and even though The Gardener says he really disliked tahini, he professed that this dressing worked increadibly well with the harissa.. . Luckily I got a few shots of the dish before we ate the lot.

The Gardener would like me to make these again ASAP. Which- as we STILL have the hugest glut of parsnips ever- I think will be absolutely fine. I might even get prettier photos.

Roasted Harissa Spiced Parsnip & Cauliflower with Tahini Dressing.

Makes enough for two.. scale this up- you’ll need more!

You Need:

For the Cauliflower & Parsnips

  • 1/2 a head of cauliflower- chopped into florets
  • 2 medium parsnips- chopped into fat chip shapes
  • 1 tsp harissa
  • juice of half a lemon
  • 1 tsp ground cumin
  • 1 tbs olive oil
  • salt to taste

For the Tahini Dressing

  • 2Tbs tahini
  • juice half a lemon
  • half tsp honey
  • 1Tbs olive oil
  • salt

To Make:

  1. Preheat the oven to Gas mark 7/ 220C
  2. Mix all the ingredients except for the parsnips & cauliflower in a large bowl until properly blended
  3. Then coat the cauliflower & parsnips in the dressing until slicked all over
  4. Put in a single layer on a baking tray & roast for 20 mins or so-until slightly charred, turning once
  5. In the meantime, mix together all the dressing ingredients- taste for salt/sugar balance
  6. Serve in a bowl with a little dressing drizzled over, with more dressing on the side for dipping.

Make more… you will want it.

    Parsnips and cauliflowers are two of my favourite veggies though I never know how to cook them imaginatively. This is a delicious recipe. I’ll try it soon. Thanks!

      Ha! I’ve just put in a ‘parsnips in the raw’ just dug up from my garden image so you can see what they look like! They look like a huge white carrot.. really popular here in the UK, as a winter vegetable- but I have to admit (and I had sort of forgotten this) that I had never seen one until I moved here.

    Wow, this looks fantastic!! I’ve never seen parsnips straight from a garden before 🙂 They’re beautiful! Roasted cauliflower is my favorite too. The combination of parsnips and cauliflower is surely amazing!

      I hadn’t either until I moved here… and we now have LOADS of the blerry things. As much as I love them, we have far more than even my greedy eating of them as chips can cope with. We’ve given them to our neighbours- even to The Gardeners hairdresser! And we have morrrre still coming!.. (just quietly – am looking for more recipes!)

      I hadn’t seen parsnips until I moved to the UK. Now they’re my favourite!
