Eggplant Tahini Garlic  Lemon Juice Sea Salt

Ingredients

Optional: Fresh Parsley Olive Oil

Step 1

Poke holes in your eggplant (aubergine)

Pop into your air fryer and roast until the skin is crispy and burnt.

Step 2

Let it cool. Remove the inners of the eggplant.

Add to your blender or food processor with tahini, lemon juice, garlic

Whizz until smooth.  Taste and add more salt or lemon juice as desired.

Serve on a plate. Add olive oil or garnish.
