Rich and Full of Flavour!
Soften the Onion and Garlic in
the olive oil over gentle heat.
Add the pumpkin and sautee until it starts to caramelise.
Add the spices and herbs and sautee to release their full flavours
Add the veggie stock. Simmer for 25 minutes
Blend the soup until smooth.
Adjust the seasonings and serve.
Serve with lots of crusty
bread (or garlic bread)
Also great as a starter for Thanksgiving.
