Braised Lettuce & Peas, French Style

Ingredients
  • 1 large or 2 small shallots , finely diced
  • Head of one lettuce , Iceburg, Butter or 2 Little Gems work well, cut into strips
  • 1 cup fresh peas (frozen are fine!)
  • splash white wine
  • teaspoon of marigold stock powder
  • 1 tbs olive oil
  • 1 tsp butter (leave out to make this vegan)
  • Salt & Pepper
Instructions
  1. In a large saucepan, sautee the onion in the olive oil until translucent
  2. Add in the lettuce and splash of wine.
  3. Let this all cook down with the lid on for around 6-7 minutes, the lettuce will give off quite a lot of water.
  4. Add in the peas and the stock powder, plus butter if using.
  5. Cook for a further 5 -7 minutes, leaving the lid off to reduce the liquid so you have a nice silky 'sauce'
  6. Season to taste with salt & pepper.
Recipe Notes

If you grow your own peas and they have become a bit big or old, cook them for longer than 5 minutes- equally delicious!
