Christmas Cashew Truffles

  • 1 cup cashew nut butter
  • 3 dates , finely chopped
  • scant half teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 tsp cocoa powder
  • Around half cup dessicated coconut
  1. Squish and mash all the ingredients together with a wooden spoon until smooth and combined
  2. Roll into little balls, around 2-3 cm diameter
  3. Roll them in the coconut.
  4. Keep these in the fridge, they taste even better after a day or so! Although they probably won't last that long!
