Butternut Squash, Chickpea and Spinach Filo Pie

This cozy roasted Butternut Squash, Chickpea and Spinach pie is spiced with warming harissa and encased in flakey filo pastry.  Perfect for Thanksgiving or Christmas.

Butternut Squash Chickpeas Spinach Filo Pastry Harissa Garlic Spices Olive Oil

The ingredients are simple...

1. Mix the chickpeas and squash with the herbs and harissa and roast

2. Cook the spinach and garlic for the spinach layer of the pie

3. Roughly Mash the roasted squash and chickpeas 

4. Lay out filo pastry sheets in a tin and  brush with olive oil.  Add in the mashed squash mix.

5. Add the layer of spinach over the top of the squash and chickpeas

5. Fold the filo pastry layers over and add more.  Brush with olive oil and bake.
