Japanese Green Beans with Sesame Sauce (Gomae Sauce)
A simple way of dressing vegetables that will become your favourite! Toasted Sesame seeds form the basis of this salty/sweet and addictive sauce for Green Beans and other vegetables.
Top and tail the green beans and boil water for them.
500 g green beans
Get a dry frying pan and toast the sesame seeds for a few minutes, or until golden. Remove from the pan immediately so they don't continue cooking and burn!
4 tablespoon sesame seeds
In a mortar & pestle, pound the sesame seeds into a rough thick paste.
Add the soy sauce and sugar to the sesame and mix
1 teaspoon soy sauce, 1 teaspoon sugar
Boil the green beans for 2- 3 minutes, then drain and refresh in ice water.
Ice Water
Drain the beans and toss with the sesame sauce. Serve.
Notes
You can serve the sauce with all kinds of other vegetables. Just steam them first. Refresh greens in ice water so they are fresh and bouncy.

Broccoli or broccolini
Asparagus
Pumpkin or squash
Storage:Store any leftover sesame goma sauce in a small container in the fridge for up to a week. Leftover veggies in their sauce should be eaten in three to five days.This recipe is designed to be served at room temperature, so you can make it a day ahead of time if you wish.
