Crispy crunchy spicy coating with juicy oyster mushrooms make a cravable burger that everyone will want to eat. Choose to make it in the air fryer, oven bake or pan fry.
In a large bowl, mix together the potato starch, water and spices to form a slurry. You might need to add more water as you go.
3 tablespoon potato starch, 125 ml water, 1 teaspoon dried thyme, 1 teaspoon oregano, 1 teaspoon smoked paprika, ½ teaspoon white pepper, ½ teaspoon black pepper, ½ teaspoon chili powder, 1 teaspoon garlic powder, 1 teaspoon allspice, 1 teaspoon celery salt
In another bowl, add all the panko crust ingredients.
65 g panko bread crumbs, 1 tablespoon olive oil, 1 teaspoon flakey sea salt
Mix the panko crumbs with the olive oil. Scrunch well with your fingers to coat the panko in the oil. This creates the lovely golden colour.
Pre-heat your air fryer to 180c/ 356F and put 15 minutes on the timer.
Try to keep the mushrooms in 2 burger sized pieces. Wipe with a damp paper towel if needed, but do not wash!
150 g Oyster Mushrooms
Coat the mushrooms in the spiced potato starch slurry, make sure they are all covered.
Then coat the mushrooms in the panko mixture.
Repeat by coating the mushrooms in the potato starch slurry, then coating with the panko (this makes for an EXTRA crispy outer shell)
Add the mushrooms in a single layer into your air fryer basket and spritz with a little extra oil.
1 teaspoon vegetable oil
Put your mushrooms into the air fryer and cook for 7-8 minutes. Check, on them then if needed, cook for up to 12-15 minutes. The mushrooms are done when the coating is golden and turning slightly brown.
Serve on burger buns with all your favourite trimmings.
2 burger buns, 4 pickled cucumbers, 2 slices vegan cheese, hot sauce, 2 leaves lettuce, 1 tablespoon vegan mayo

TOP TIPS for the perfect batch of air fried oyster mushroom burgers:
Don't miss out on scronching the oil into the Panko breadcrumbs, otherwise they don't colour up into that lovely appetizing golden 'fried' effect.
Air fryer baskets vary in size, so be sure not to overcrowd the basket for the best result.
Check the mushrooms after 7-8 minutes, as air fryers vary in how quickly they cook.
STORAGE:These air fryer oyster mushrooms taste best crispy hot. You can however make them the day before and part air-fry them, then give them another 5 minutes in the air fryer to finish off. This would be very useful for making for a larger group of people. This recipe will not freeze well or store for more than a day.
