Miso Glazed Eggplant

(Nasu Dengaku) 

Chop eggplant and score.  Brush with oil & bake in oven

Make glaze  with Miso, Mirin and Sugar

Gently cook miso glaze ingredients until thickened.

Glaze the now cooked eggplant  and return to oven for 5 mins

Serve over sushi rice.
