Instructions
Boil the peas for a minute, drain and refresh in very cold or iced water.
200 g green peas
Combine the peas with the olives, capers, garlic, mint and lemon juice in a blender or food processor.
50 g green olives,
50 g capers,
1 clove garlic,
10 g fresh mint leaves,
30 ml lemon juice
Blend until you have a smooth but slightly chunky dip.
Serve in a small bowl with olive oil and extra peas or olives and mint leaves on top.
