This delicious and vibrant Green Pea Dip recipe made with tangy olives and fresh mint is the perfect snack for serving at a BBQ or picnic, or just make a batch to smear on crostini or a crusty baguette.
Fresh and zesty veggie filled dips are the perfect food for lazy summer days or to take to cookouts, or just to add some fun and flavor to sandwiches or snack time. Served with tortilla chips or pita bread, or just some fresh veggies cut into batons, they can be a great way to sneak extra veggies into your diet!

🫛Ingredients
The simple ingredients you'll need to make this delicious dip with fresh peas!
- Green Peas: If you can find fresh spring peas at the farmer's market or just picked from your garden, then choose those! Otherwise a frozen bag of peas are a great alternative as they keep that sweet pea flavor as they're packed and frozen immediately.
- Green Olives: Choose juicy pitted Queen olives. Make sure to double check for pits, even pitted olives sometimes have bits left in them.
- Lemon Juice: Fresh lemon juice is best!
- Fresh Mint Leaves: You'll need some mint for the dip, and a few small leaves to sprinkle on top for extra fancy presentation!
- Clove of Garlic: a single small clove of fresh garlic is enough.
- Capers in Brine: Make sure they're not the capers packed in salt.
- Good Extra Virgin Olive Oil: This is to drizzle on top of the dip.
- Optional: Flakey Sea Salt (I think the olives and capers are salty enough so be careful when adding so as not to overwhelm the flaovr

👩🍳Instructions
Use these handy how-to instructions to visualize the steps to make this fresh pea, olive and mint dip.
1. Pour boiling water over your peas and boil for under a minute. Drain and refresh under cold water immediatly to keep the vibrant green and sweet flavor of the peas.
2. Add the drained, cool peas and all the ingredients (except the olive oil) to the jug of a blender or your food processor.
3. Pulse your blender or processor a few times to blend the dip. You want a smooth but slightly chunky texture. Taste and add more lemon juice, olives or salt.
4. Place the dip in a small serving bowl , sprinkle over extra slices of olives, fresh peas and mint leaves. Drizzle over extra virgin olive oil.
Serve with sourdough bread, pita chips or fresh raw vegetables ! Great in a sandwich too.
Hint: Don't overcook the peas , you want to retain their bright fresh flavor and colour. They only need a short time in the boiling water.
🌶️Substitutions & Variations
Here are some yummy ways you can switch up this vibrant dip to cater it to your taste buds:
- Edamame - switch the peas for edamame for a lovely twist.
- Different Allium: - Switch the garlic clove out for red onion or green onions.
- Get Zesty- Add lemon zest as well as the lemon juice.
- Spicy- A little cracked black pepper, or red chili flakes for a kick of heat.
- Top with other seeds and nuts like sesame seeds or pine nuts for crunch.
🔪Equipment
You'll need a food processor or blender to make this dip, plus a saucepan and colander to cook the peas and refresh them in cool water.
🫙Storage
Store this dip in an airtight container for up to a week. I do not recommend freezing.
Top tip
Cooling the peas off once cooked in an ice bath or cold water will help them retain their beautiful fresh green colour.

Green Pea Dip with Olives and Mint

For accuracy, I measure all ingredients in metric as standard, then convert and test the recipe for American cup measurements etc.
(Heads up Aussie and UK readers- your measurements in cups are sometimes different, so please use metric or check you have the correct cup and spoon type!!)
Ingredients
- 200 g (1 ½ cups) green peas
- 50 g (½ cups) green olives
- 50 g (⅓ cups) capers
- 1 clove garlic
- 10 g (2 tablespoon) fresh mint leaves
- 30 ml (⅛ cups) lemon juice
- 1 teaspoon (1 teaspoon) olive oil (to serve )
Instructions
- Boil the peas for a minute, drain and refresh in very cold or iced water.200 g green peas
- Combine the peas with the olives, capers, garlic, mint and lemon juice in a blender or food processor.50 g green olives, 50 g capers, 1 clove garlic, 10 g fresh mint leaves, 30 ml lemon juice
- Blend until you have a smooth but slightly chunky dip.
