This delicious snack is perfect for making when you have plenty of basil to use up, but also want a yummy dip or sandwich spread that happens to be high in protein too! It's perfect for serving with some pita chips or tortilla chips, or even just some fresh veggies. Plus this easy edamame dip is way healthier than dips you buy at the grocery store

Here are the simple ingredients you'll need for this Basil Edamame Dip:

- Shelled Edamame Beans: also known as fresh soybeans. These are the kind of beans you get at Japanese restaurants where you pop open the outer shell before snacking on the beans inside. I like to buy them pre-shelled and frozen.
- Fresh Basil: You'll need a good amount of fresh basil to make this dip.
- Fresh Lemon Juice: This really perks up the flavor of the dip.
- Nutritional Yeast: This adds a savory note a little like parmesan cheese. Look out for versions with added B12 which is always good to add to your diet.
- Garlic: I only use one fresh garlic clove in this recipe but you can add more if you're up for it.
- Olive Oil: the good extra virgin olive oil does make a difference
- Flakey Sea Salt: to taste!

Making this edamame dip is very easy!

1. Boil some water then immerse the edamame in the boiling water for around a minute.

2. Drain the edamame beans immediately then rinse under cool water to cool down. You want them to retain their bright green freshness.

3. Add all the ingredients including the edamame to the jar of a high-speed blender or the bowl of a food processor.

4. Blitz a few times in the blender until you have a thick but mostly smooth hummus type texture. If you need to, add a few tablespoons of water bit by bit to the dip to get to the right texture
Taste the edamame basil dip and add more lemon juice or salt to taste. Serve with rice crackers, on toast, or with carrots as a yummy little snack.
Hint: Make sure not to over boil the edamame beans. Rinsing in cool water stops them cooking further and keeps their bright colour.

Here are some yummy ways you can switch up the recipe for this edamame dip!
- Extra Garlicky - Add more garlic cloves. Or even better, roast garlic whole and squeeze into the dip.
- A little spicy - Add some hot sauce or chili flakes.
- Lime & Cilantro - send this dip into a guacamole style flavor by adding lime juice, coriander leaf/cilantro and some chili to taste.

You'll need a good quality high-powered blender or food processor to make this dip.

Store in an airtight container for up to a week in the fridge. I haven't tested it in the freezer as yet but I think it would be fine to freeze for up to 2 months. Thaw and re-blend if necessary.
Top tip
Make sure to taste as you go to get the best balance of flavors. Don't be scared to add a little extra lemon juice, salt or even more basil if that's what you think the dip needs.

- 250 g (1 ยฝ cups) shelled edamame beans
- 30 g (ยฝ cups) fresh basil (a big handful)
- 1 clove garlic
- 15 g (2 tablespoon) nutritional yeast
- 30 ml (โ cups) lemon juice
- 1 teaspoon (1 teaspoon) olive oil (to serve )
- ยฝ teaspoon flakey sea salt (or to taste)
Instructions
- Boil the edamame for a minute, drain and refresh in very cold or iced water.250 g shelled edamame beans
