Ingredients

tofu (firm or silken will work)
½
teaspoon
turmeric
¼
teaspoon
kala namak
indian black salt. This gives an 'eggy flavour. Use sparingly

tablespoon
nutritional yeast
1
teaspoon
smoked paprika
optional

small
pointy red pepper, chopped
2
spring onions
6
cherry tomatoes

Fresh Herbs
such as parsley

tablespoon
olive or vegetable oil

Instructions
In a frying pan, heat up the oil. Sautee the peppers, spring onions and any other veggies.
Pop the tofu into the pan and mash it up a bit with the back of your spoon.
Add the spices (turmeric, kala namak, nutritional yeast, smoked paprika etc) and mix
Gently cook for another minute until the tofu is heated through and mixed. It should look like posh scrambled eggs.
To serve, mix in the fresh herbs and add salt & pepper to taste.
Notes
Change this recipe by adding different herbs and spices. Serve over toast, or in wrap, Mexican Breakfast style.
