These crunchy and crispy Air Fryer Green Bean Fries are totally addictive. Once you try making them, you'll want to make them every week for snacks or as a fun side to replace regular fries.
Green beans are especially delicious in summer and early fall, so these make a great treat if you have your own crops to pick from or a farmers market. The crunchy coating enhances the sweet snap of the fresh beans.

Use this as a helpful guide for the perfect crispy green beans fries !
- Green Beans: make sure to choose crispy fresh green beans that aren't old or floppy.
- Panko Breadcrumbs: for a Fluffy and extra crispy light texture! I like to use panko bread crumbs You can choose regular bread crumbs if you wish.
- Corn Starch or Potato Starch: combined with water, this helps the breadcrumbs stick to the green beans. It avoids having to use egg as a binder.
- Nutritional Yeast: This is for a lovely nutty cheesy taste that is a little like parmesan cheese. Omit it or use another vegan cheese if you like.
- Garlic Powder (or onion powder) : for a little hint of garlic that goes so well with the beans.
- Oregano or other dried herbs: I like oregano paired with the green beans, however parsley , basil or even dill would be yummy.
- Olive oil: to avoid using too much oil, the olive oil gets rubbed into panko breadcrumbs.
- Red Pepper Flakes or chili powder: optional but delicious if you like heat!
- Flakey Sea Salt or kosher salt: Perfect for seasoning. I sprinkle some into the panko mix then a little extra later on. You can also add a little black pepper...

Follow along with these step by step instructions to make this green bean fries recipe.
1. Mix herbs and seasoning into the cornstarch and water.
2. Make the panko mixture by adding nutritional yeast and scrunching the olive oil in.
3. Make a bit of an assembly line, and put a handful of green beans into the corn starch mixture and cover.
4. Then dip the beans into the panko breadcrumb mixture.
5. Lay the breaded green beans out in a single layer in your air fryer basket. Then cook at 180C/375F for 8-10 minutes, or until the panko is crispy and golden brown.
Serve with your favorite dipping sauce such as homemade ranch dressing or a spicy hot sauce.
Hint: You can also cook the green bean fries in the oven. Simply line a baking sheet with parchment paper and bake at 180C/375F for 15-20 minutes or until golden brown and crispy.
🌶️Substitutions & Variations
Here are some easy ways to customize these crispy green bean fries.
- Gluten-Free - choose gluten-free panko breadcrumbs. Alternatively you can use almond flour breading.
- Spicy- Choose different levels of chilli. Or try with tajin or garam masala.
- Oil: - you can make thesetotally oil free by omitting the oil. Alternatively choose avocado oil or coconut oil. You can also use cooking spray as an alternative to regular oils
- Fresh Herbs- choose a sprinkle of fresh parsley or oregano.
🔪Equipment
This recipe is designed to be used with an air fryer. I like my Ninja Foodie. You can also bake these in your oven. You'll need two shallow bowls to make the two mixtures of corn starch and the panko.
🫙Storage
This recipe is best eaten immediately when hot and crispy. If you do have leftovers, put them in an airtight container in the fridge for up to 4 or 5 days. . Reheat in the air fryer for a few minutes.
Top tip
Make sure to lay the green beans in a single layer so they cook with a perfectly crispy coating.

Yes you can choose frozen green beans. They aren't quite as sweet and snappy as fresh, but are great options for when green beans are not in season.

Crispy Air Fryer Green Bean Fries

Ingredients Note:

Ingredients
- 500 g (1 lb) green beans (topped and tailed)
- 1 teaspoon vegetable oil (in a spray bottle)
For the Corn Starch Slurry
- 3 tablespoon corn starch
- 125 ml water
- 1 teaspoon oregano (or parsley)
- 1 teaspoon garlic powder
- 1 teaspoon hot sauce (OPTIONAL)
For the Panko Crust
- 1 tablespoon olive oil
- 65 g (1 cup) panko breadcrumbs
- ½ teaspoon mild chilli powder (or chili flakes)
- 3 teaspoon nutritional yeast (add more if you like it cheesier!)
- salt & pepper-to taste
Instructions
- In a large bowl, mix together the potato or corn starch, water and hot sauce and other seasonings if using to form a slurry. You might need to add more water as you go3 tablespoon corn starch, 125 ml water, 1 teaspoon garlic powder, 1 teaspoon hot sauce, 1 teaspoon oregano
- In another bowl, add all the panko coating ingredients.1 tablespoon olive oil, 65 g panko breadcrumbs, ½ teaspoon mild chilli powder, 3 teaspoon nutritional yeast, salt & pepper-to taste
- Mix the panko crumbs and seasonings with olive oil. Scrunch well with your fingers to coat the panko in the oil. This creates the lovely golden colour.
- Pre-heat your air fryer to 180c/ 356F and put 15 minutes on the timer.
- Top and tail the beans. Chop any very long ones into half.500 g green beans
- Dip the green beans into the corn starch mixture
- Coat the green beans in the flavoured breadcrumbs.
- Lay out the green beans in a single layer into your air fryer basket and spritz with a little extra oil.1 teaspoon vegetable oil
- Pop into the air fryer and cook for 12-14 minutes. Check, on them then if needed, cook for up to 12-15 minutes. The green bean fries are done when the coating is golden and turning slightly brown and tender soft inside.
- You can serve with a vegan alioli, a salad and lovely fresh Sauv Blanc.
