This summer has been so hot, for so long that we are basically living on salad and BBQs. Anything cool, crunchy and tangy that compliments BBQ or outdoor eating is a guaranteed winner, which is why we came up with this yummy Kohlrabi, Carrot & Orange salad.
This recipe makes the most of new season veggies such as Kohlrabi and the little fresh carrots that are popping up around the markets. Kohlrabi is one of those vegetables that gets forgotten about, or left aside for winter, which is a shame because it makes a fantastic crunchy refreshing salad.
I used the slicer attachment on my food processor to create the thin slices, but you could just as easily grate it or use a mandolin.
You could also use other crunchy ingredients here. Cabbage or radishes would be nice, and you could add in some parsley for an extra fresh taste. Some chives or spring onions would also be lovely.
One of the nicest things about this Kohlrabi, Carrot & Orange Salad is that it keeps happily in the heat or overnight. Perfect for outdoor BBQ style dining or to take on a picnic.
(PS: this YUMMY dressing is in this month's (July) box.. !)
