Rich tomatoey flavors paired with creamy white beans combine to make the perfect dinner. You could even make this recipe without any chopping if you just use jarred garlic. Based on the much loved classic Italian pasta dish Spaghetti Puttanesca this easy variation is the perfect weeknight staple you can eat over and over without any of the added sluggishness that a bowl of pasta can give you.
This delicious Puttanesca Beans recipe is a gorgeous mash up of ideas. It's rich sauce is based on the classic pasta sauce from my vegan Penne Puttanesca . It's also takes a note from my other one-pot pasta but make it beans dish, White Beans & Peppers Stew.

- White Beans- You can choose Cannellini Beans or Butter Beans
- Chopped Tomatoes or Passata.
- Black Olives (I like kalamata olives best in this, but you can also use whatever your favourite is
- Capers- One or two tablespoon capers add to the tangy flavors.
- 4-5 garlic cloves- I used fresh garlic, but use jarred to make this recipe chop-free!
- Olive Oil- A good glug of olive oil is needed to sizzle the garlic.
- Chilli Flakes or Red Pepper Flakes- to taste
- Sea Salt: to taste
- Oregano or thyme- or both!
- Black Pepper- again to taste. Choose freshly cracked black pepper if you have it.
- White Wine or Red Wine: Use whatever you have available. If you don't want to use wine, a tablespoon or two of balsamic vinegar or ACV will help balance the flavors.
- Optional Fresh Parsley or Fresh Basil to serve

1. Heat a few tablespoons of the olive oil in a large skillet over medium heat and sizzle the garlic in it. Add the tomato paste and chilli flakes and cook it down for a minute.
2. Add the cans of chopped tomatoes, herbs and wine.
3. Tip in the drained white beans, then add the capers and olives.
4. Let the beans simmer in the rich tomato sauce until they come together. Dress with herbs and a sprinkle of nutritional yeast and servew with crusty bread.
Hint: Add a little sugar to taste if needed, or if the sauce is too acidic, add a ¼ teaspoon of bicarb soda to balance the flavor of the puttanesca sauce.

Here are some tasty ways you can put your own spin on this Puttanesca Beans recipe:
- Other Beans: - I love making this recipe with cannellini beans, however you can use lima beans, kidney beans or even black beans.
- Extra Spicy - Swap the red-pepper flakes for a spicier red chilli flake or add a few shakes of your favourite hot sauce.
- Other olives -choose whichever olives you love best, or have to hand. Green olives or black. I've even used leftovers from a snack board that I didn't want to waste!

Top tip
Make sure to cook down the tomato paste in the olive oil with the garlic. This makes it taste less 'tinny'.

Ingredients
- 400 g (1 ⅔ cups) crushed tomatoes (or chopped tomatoes (1x15 oz can/tin) )
- 5 cloves garlic
- 2 tablespoon olive oil
- 2 tablespoon tomato paste
- 480 g (2 ⅔ cups) cannellini beans ((Drained. Equivelant to 2 standard 15 oz or 400g 'cans' ))
- 3 tablespoon capers
- 3 tablespoon kalamata olives
- 1 teaspoon oregano
- 1 teaspoon sea salt
- 1 teaspoon chili flakes
- 1 tablespoon wine (white or red)
Instructions
- Finely chop the garlic.
- In a large casserole or dutch oven, gently heat some olive oil and add the garlic.2 tablespoon olive oil
- Sizzle the tomato paste for a minute along with the garlic. Add the chilli flakes to bring out their flavor.5 cloves garlic, 1 teaspoon oregano, 1 teaspoon chili flakes, 2 tablespoon tomato paste
- Now add the tomatoes (or passata) drained beans, capers, olives, oregano, salt and wine.400 g crushed tomatoes, 480 g cannellini beans, 3 tablespoon capers, 3 tablespoon kalamata olives, 1 teaspoon sea salt, 1 tablespoon wine
- Simmer the stew until it comes together and the beans soften. The tomato sauce should look rich and tasty.
- Taste and adjust the flavors by adding more salt or pepper, or even a smidge of vinegar or wine to balance the flavor according to your own tastes.
- Serve with crusty bread and chopped parsley.
