This super simple sandwich idea can be made open-face smorrebrod style, or put together as a more portable sandwich to take on a picnic. Smoked tofu makes a delicious vegan alternative for smoked fish or meat! This Scandi Inspired Smoked Tofu sandwich is one we turn to again and again for a quick, easy and super tasty vegan sandwich!
💛Smoked Tofu
Smoked tofu is worth seeking out at your supermarket or health food store! We like to use the Taifun Brand (available widely in the UK and Europe). Simply smoked fresh tofu takes on lovely smokey flavours and the texture changes to be firmer. When thinly sliced cold I think it tastes a little of smoked salmon.
As the tofu is smoked, it doesn't need cooking, or pressing (although you can use it to cook with), so all you need to do to assemble the sandwich is slice and assemble!

🧾Other key ingredients
The Bread : Good sandwiches require good bread! Rye bread is traditional for Smorrebrod. However, I really like a lovely sourdough that has a mix of wholemeal, rye and white flour. The key is a good bread that can stand up to lots of flavours and toppings!
Little Dill Pickled Cucumbers : These provide crunch and tang that is a lovely foil to the smoked tofu.
Vegan Herb Cream Cheese: This is perfect as the creamy base for the sandwich. We love Nush or Bonsan herb cream cheese, which are made with a base of almonds. But you can use plain vegan cream cheese or mayonnaise if you prefer.
Crunchy Veggies: In the photos I've used lovely little gem lettuce, but a layer of grated carrot or thinly sliced radish is also delicious.
Herbs: Fresh herbs really elevate a sandwich. I've used dill here, for a really traditional Scandi flavour, however cress, radish shoots, parsley or chives would all also be delicious.

I make this sandwich open style for a quick at-home lunch, but make it between two pieces of bread to take out and about on a picnic or to work.

Scandi Inspired Smoked Tofu Sandwich
Ingredients Note:
For accuracy, I measure all ingredients in metric as standard, then convert and test the recipe for American cup measurements etc.
(Heads up Aussie and UK readers- your measurements in cups are sometimes different, so please use metric or check you have the correct cup and spoon type!!)
Ingredients
- 4 slices sourdough bread
- 100 g smoked tofu
- 35 g lettuce leaves (or thin sliced radishes)
- 2 tablespoon vegan cream cheese (either plain or herbed)
- 2 pickled cucumbers
- 2 tablespoon fresh herbs
- 2 tablespoon capers
Instructions
- Slice the smoked tofu as thinly as you can.100 g smoked tofu
- Slice the pickled cucumbers thinly.2 pickled cucumbers
- Assemble the sandwich by smearing a layer of vegan cream cheese onto a slice of bread.2 tablespoon vegan cream cheese, 4 slices sourdough bread
- Now add the thinly sliced smoked tofu, pickled cucumber, lettuce, herbs and capers.35 g lettuce leaves, 2 tablespoon fresh herbs
- If you are going to make this an open sandwich, eat as is.2 tablespoon capers
- If you want to transport the sandwich, smear vegan cream cheese on the other piece of bread and sandwich together (this keeps the bread gripping the fillings!)
