🍄Why mushrooms are brilliant
Mushrooms are a great ingredient, especially in vegan recipes because they:
- are a good source of protein - check out our guide on vegan protein and high protein recipes!
- have a meaty texture, which is great for replicating meat dishes! We have more amazing recipes for Meaty Meatfree Vegan dishes!
- have that umami (or savoury) flavour, which we need to satisfy our taste buds!
- are full of fibre and nutrients, which is great for gut health and overall health
- are often cheap and readily available (some of the wilder varieties are more expensive, but you can always use supermarket mushrooms for any of these dishes).
An obvious choice for vegan mushroom recipes are pasta dishes. They're quick and easy, and often replace meat in traditional pasta dishes, such as lasagne.
We love South-East Asian vegan food. There are lots of incredible vegan Asian mushroom recipes that are easy to make and include those essential flavours of the East! From noodle bowls to dumplings, these are some of our favourites! Don't forget that if you want to make these gluten-free, use tamari, which is the gluten-free version of soy sauce.

Probably the classic of all vegan mushroom recipes is risotto. Risotto is so warming, delicious and filling, so we've picked out the best of them! Another reason we love mushrooms is because they're perfect for stuffing and baking! I love how the flavour deepens when you roast them in the oven, yum! I just love pie dishes! They're indulgent, nostalgic and taste amazing. These vegan recipes lend themselves so well to mushrooms as some can feel like a traditional meat pie. Both Louise and I are big fans of filo pastry as it's healthier than shortcrust or puff pastry, and very easy to use.
