It’s that time of year! The courgettes are on the rampage in my garden and we can’t eat them fast enough. I’ve had them in pies (see my previous post!) I’ve made fritters, I’ve made them into chips and stirred them into pasta sauce and yet they keep on coming.
So I thought I’d get some inspiration from some other very talented bloggers for some new recipes to try, and colour me impressed. There are SO many ways you can eat summer squash! From using it in brownies, baking it into cornbread through to making pickles. WOW!

Dixya over at Food, Pleasure and Health has made a quick pickle that’s full of zing. Add it to rice or layer it onto a burger! Yum!
Steve over at Circus Gardener keeps it simple and perfect for BBQ weather with this summery salad. Courgettes lend themselves to the heat of the BBQ or a char grill and the addition of lemons make this so zippy and delicious.

If you’re in need of a bit of comfort food, this Zucchini Tomato Pie by Annie over at Kitchen Window Clovers is just perfect.
Despite it being the middle of summer, the UK has been quite wet this year, which makes a stew like this one with chickpeas by Veggies Save the Day perfect. Even better? You can make it and freeze it for later in the year. Your taste buds will thank you!

Summer squash lends itself to to being stuffed. This recipe from Eggplant & Olive makes the most of the summer veg glut and is a nice twist on a classic Involtini recipe.
One of my favourite things is roasted chickpeas, which added to this yummy quinoa veggie bowl alongside grilled courgette makes this dish by Curry Trail a must to try.
Maya over at Spice & Sprout has made a delicious looking and very creative sounding recipe. With flavours from Japan & the Levant with a hint of Mexico in there for good luck. And why not? The best thing about the internet is we can get inspiration from all over the world!
Sweet Treats are also on the menu with this season’s glut! There are SO many delicious recipes I had trouble narrowing the list down to just a few!
