    I have Christmas news..

    Very SUPER exciting Christmas news!

    I'm teaming up with my friend Vanessa (Say Hi to Vanessa!) to create a whole new blog & business.

    WHAT?!

    At some point in the next few weeks, Poppy and the Bees will transform into The Vegan Larder. I feel a little pang at changing the name, but let's face it, Poppy isn't the greatest advocate of vegan living, being as she's a murderous little cat (I had to rescue a mouse from her jaws this very evening!). Also, the bees can't cook and slightly resent being photographed. They'd rather go about their buzzyness in the garden in peace, thanks very much.

    Vanessa & I will be focusing on delicious vegan recipes and will be launching a vegan subscription box very soon. We will also be helping restaurants, cafes, caterers and pubs with vegan menu creation under the name V&L's Kitchen. (If you have a fave place that could do with some delicious veggie food ideas, send them in our direction!)

    So who is Vanessa? 

    I met Vanessa a little while ago and we swapped vegan gossip (it's a thing, promise). Since then we've been hanging out at vegan events (so exciting to have a vegan friend to go to these things with!) and have had a few epic all day cooking sessions where we have gotten to know each others passion for cooking (and eating) delicious vegan food.  We also realised that we were both trying to start a vegan business and as it happens our skills nicely complement each other. Vanessa has spent the last few years making amazing vegan connections, plus has a background in Corporate change management- brilliant for helping businesses with creating new plant based menus.     So meet Vanessa, and try her first recipe for the blog!  Obviously it's Avo on toast. I mean, can you even be vegan without loving Avo on Toast?! 

    Christmas Morning Avo on Toast:

    So, I’m certainly not claiming to be original here by serving you up avocado on toast! Let’s face it, it’s so yummy we could eat it all day, everyday, even Christmas morning. So I thought, let’s give it a Christmas make over to add festive cheer to this all-time favourite. Personally, I’m sourdough obsessed, and love a big thick slice of it to slather my avocado on. Not only is it much better for your health as it’s fermented, but it is also so so delicious. But any bread
    will work for your toast.

    Usually, I keep this dish simple – avocado, salt, pepper, olive oil, may be some chili and paprika depending on my mood. But for Christmas morning, we have to have more red. So I’ve chosen pomegranate. It’s cute, bright and fun. And I love the crunch the seed gives which is a great contrast with the creamy avocado. I’ve also kept the chili on there too for Christmas morning, because, why not?!

    Christmas Morning Avocado on Toast

    A festive twist to a vegan classic! Everyone loves avocado on toast, and it's so much fun to switch up itrs flavour and texture. We love adding some sweetness to it with the Christmas fruit pomegrante, which also has a festive colour!

    Ingredients

    • 1 slice sourdough bread
    • Half a ripe avocado
    • 20 pomegranate seeds
    • Salt and pepper (to taste)
    • ½ tsp chili flakes (optional)
    • Drizzle of olive oil
    • Squeeze of lemon juice

    Instructions

    • Place bread in toaster and put on setting so it comes out golden brown.
    • Mash half an avocado and spread on bread once toasted.
    • Sprinkle salt, pepper and chili flakes on avocado. Then add the pomegranate seeds.
    • Drizzle with lemon juice and olive oil.
