    The BEST Avo on Toast for Christmas..

    Christmas Morning Avo on Toast:

    So, Iโ€™m certainly not claiming to be original here by serving you up avocado on toast! Letโ€™s face it, itโ€™s so yummy we could eat it all day, everyday, even Christmas morning. So I thought, letโ€™s give it a Christmas make over to add festive cheer to this all-time favourite. Personally, Iโ€™m sourdough obsessed, and love a big thick slice of it to slather my avocado on. Not only is it much better for your health as itโ€™s fermented, but it is also so so delicious. But any bread
    will work for your toast.

    Usually, I keep this dish simple โ€“ avocado, salt, pepper, olive oil, may be some chili and paprika depending on my mood. But for Christmas morning, we have to have more red. So Iโ€™ve chosen pomegranate. Itโ€™s cute, bright and fun. And I love the crunch the seed gives which is a great contrast with the creamy avocado. Iโ€™ve also kept the chili on there too for Christmas morning, because, why not?!

    Christmas Morning Avocado on Toast

    A festive twist to a vegan classic! Everyone loves avocado on toast, and it's so much fun to switch up itrs flavour and texture. We love adding some sweetness to it with the Christmas fruit pomegrante, which also has a festive colour!

    Ingredients Note:

    For accuracy, I measure all ingredients in metric as standard, then convert and test the recipe for American cup measurements etc.

    (Heads up Aussie and UK readers- your measurements in cups are sometimes different, so please use metric or check you have the correct cup and spoon type!!)

    Ingredients

    • 1 slice sourdough bread
    • Half a ripe avocado
    • 20 pomegranate seeds
    • Salt and pepper (to taste)
    • ยฝ teaspoon chili flakes (optional)
    • Drizzle of olive oil
    • Squeeze of lemon juice

    Instructions

    • Place bread in toaster and put on setting so it comes out golden brown.
    • Mash half an avocado and spread on bread once toasted.
    • Sprinkle salt, pepper and chili flakes on avocado. Then add the pomegranate seeds.
    • Drizzle with lemon juice and olive oil.
