It’s been a long & (somtimes) hot summer! We’ve been really enjoying this one and getting our BBQ on! We thought it was only right at this point to do a round up of some of our 6 Best Vegan Summer and BBQ Dishes you can make this season. All crowd pleasers, seasonal, and perfect for the warm weather.
If you’re having a lazy day and just want the perfect Summer Vegan Meal delivered to your door, we seriously recommend All Plants Summer Range. They do the most incredible, delicious, healthy frozen meals. Easy to grab out the freezer when you’re pushed for time, or just fancy having a relaxing evening without cooking!
Burgers should be filling, flavourful, and certainly never fall apart. These have great texture and withstand flipping! They are packed full of protein from the beans – use whatever you have in your cupboard (like chickpeas), but we love black beans in these ones!
Summer is not summer without the best salads, and no need for these to be boring. We loved making this vegan version of the French traditional salad. It’s all about the high quality seasonal green beans and potatoes. The dressing, made with capers, can be used for other salads too!
We know when summer comes it means Courgette Everything… Louise has such an abundance from her garden she tells Vanessa she has to come to pick up ‘Mandatory Courgettes’! Luckily, there are so many delicious things that can be made with these, including this Courgette Babaganoush. You can even char your courgettes on a BBQ first for a super smokey flavour.
We’re suckers for a good lazy Sunday morning breakfast, and pancakes are a must. These pancakes are gluten free, and such a treat drizzled with white chocolate sauce (yes, you can get vegan white chocolate from places like Sainsburys) and top with summer fruits. If you want a savoury version top with vegan cheese, spinach and maybe some scrambled tofu.
If you don’t want to make pancakes totally from scratch, then we recommend Sweetpea Pantry pancake mix. They use natural ingredients and their ready to go mixes taste amazing.
We all know that our stomachs leave essential dessert space! While chocolate isn’t always the obvious go-to in summer, Vanessa will always find a way… it just means an excuse to make chilled chocolate desserts. Remember those rolo desserts we had as kids? This tastes just like it. It’s easy-peasy to put together using melted chocolate, coconut milk, and the best bit – sea salt. No one will believe it’s vegan!
Ok, we all love a good carnival. This year, we’ve been cooking our own version of traditional carnival food, which is just as good (well, better we think, of course!). Vanessa especially loves playing with food from her Caribbean roots, so we had to put this Jamaican Jerk Jackfruit with Rice and Peas on. You can use the jerk marinade on cauliflower and tofu too. Bonus if you fry up some plantain with it!
Jackfruit is also on the summer menu at All Plants as part of their summer range. So if you’re after the carnival flavour but without the cooking bit, they do incredible healthy frozen meals delivered to your door.
