☀️Why baked potatoes are good for you
Baked potatoes are a great choice for a meal! Not only do they sit in the oven while you can go and relax (or workout!), they have lots of health benefits:
- they give you slow release energy, so you'll be fuller for longer!
- they're a wholefood. This means they are not processed and have no preservatives.
- you can just bake them as they are with no extra oil or butter (if you want - but we have advice for the best vegan butter if you want to add some)
- they go really well with healthy, filling toppings such as beans, hummus and avocado dip!

There's such a range of amazing vegan potato toppings to choose from, so we're going to talk about my personal favorite top three here:
🐠Chickpea Salad of the Sea (vegan tuna)
This "vegan tuna" Chickpea Salad of the Sea topping is one of the most simple vegan "fish" recipes, which also goes very well in sandwiches too. It's made with chickpeas, mayo and some other "Of-the-Sea" flavours like seaweed and capers.
We use a delicious vegan mayo, which you can either buy, as there are amazing vegan options out now, or you can make your own.
🧀Cream Cheese and Chives
An absolute classic for a vegan baked potato topping. You can either make your own cream cheese and add chives to it - we have this delicious and healthy vegan cashew cheese, that you can add extra vinegar to for a more runny sour cream, or leave nice and thick.
You can also buy vegan cream cheese with chives. We love Nush's almond version which has live cultures and is great for gut health. 🌶️Red Pepper Hummus
Actually, any hummus would work here, but I've made a standard hummus and added roasted red peppers from a jar - just like my Sundried Tomato Hummus but with peppers instead of the tomatoes. This is a super-easy way of making red pepper hummus. We have loads of hummus recipes you can choose from such as beetroot, pumpkin and black bean!
🧈Vegan Butter Alternatives
If you use one of our lovely toppings above, then you probably won't miss the butter, as they give that delicious moisture to contrast with the vegan baked potato and crispy skin. If you want a great vegan butter, we would recommend Naturli Vegan Butter, which has that buttery taste you might be missing. A drizzle of olive oil also works. Do check your supermarket for vegan butter as it will be there, as well as online.
