Gooey and rich, these Christmas Mince Pie Chocolate Brownies are the perfect little after Dinner dessert or coffee time snack. Made with spiced fruit mince- the kind that goes into traditional British Christmas Mince Pies, as well as loads of velvety chocolate, these egg free and vegan brownies are a great treat to share for the festive season!
Whilst I think we can all agree that classic brownies are ALWAYS a good idea, we don't necessarily associate them with Christmas. These Festive Brownies are a delicious twist on the original, and will unite brownie lovers and delight mince pie fans too!.

🍫Ingredients
These are the ingredients you'll need for these deliciously squidgy Mince Pie Brownies. Quantities needed for both Metric and US standard cups/weights are listed in the recipe card.
- Plain/AP flour: Ordinary flour is best for brownies!
- Ground Flax Seed (and water) - Ground flax also known as linseed. When mixed with water it becomes vegan egg mix: it's easy to make and keeps the brownies together with the squidge that brownies need.
- Brown Sugar: I like brown sugar for the richer flavour it brings.
- Sunflower (or other neutral oil): this replaces butter, and I think does a great job of keeping the brownies moist and dense.
- Cocoa Powder: Good quality cocoa powder of course!
- Dark/Semi Sweet Chocolate Chips: choose a vegan or plant based chocolate chip to keep this dairy free. (If you're in the UK, Tesco own brand Dark Chocolate chips are perfect)
- Plant-Based Milk: I prefer oat milk, however soy milk or almond milk also work.
- Vanilla Extract: For a little fragrance and to enhance the other flavours.
- Baking Powder: for a little lift and fluffyness.
- Cinnamon: Fragrant and works so well with dark chocolate.
- Ground Ginger: Add more ginger for a spicier more grown up brownie, or leave out for kiddos.
- Mixed Spice: You can add more, omit or use ground cloves or allspice instead.
- Mince Pie Filling (also known as mincemeat or fruit mince): You can buy this in jars at the supermarket. Most are vegan and use vegetable based suet along with the traditional raisins and other dried fruits. You could also make your own homemade mincemeat and use that. (I've tested this recipe with my own Boozy Fruits: Alcohol-Infused Fruit and they turned out SO yummy!)

👩🍳Instructions
Follow along with these step by step instructions for perfect festive mincemeat brownies!
1 Mix the ground flax with the water in a small bowl. This will gel up after a few minutes and 2. becomes our egg free vegan egg!
3. In a large mixing bowl, Add the sugar, plant milk to the oil and add in the flax egg mix.
4. mix until the sugar dissolves.
5. Add in the flour, baking powder, cocoa powder and spices to the wet mixture and mix well. Be sure to whisk out any clumps.
6. Add the mincemeat and chocolate chips and stir to combine.
7. Pour the brownie mixture into a brownie tin and bake for 25-30 mins at 180°C/Gas Mark 4/325°F.
The brownies are ready when they no longer wobble in the tin and a skewer comes out with a bit of mixture attached that is semi baked!
Leave the brownies to cool in the tin, then slice into squares. You can dust with icing sugar, decorate with pretty stars or make a fudgy topping as desired.
Hint: Be sure to leave the brownies in the tin to cool! This allows them to finish cooking and creates the best fudgy texture. Then once cool, turn out onto a wire rack or directly onto a plate.

- Individual Brownies: Use a 12-hole muffin tin and portion out single brownies instead of one large one.
- Milk Chocolate- If you want a less intense chocolate experience, try using vegan milk chocolate buttons or chop up a block to use instead.

🔪Equipment
The great thing about this festive Mince Pie Brownie recipe is that it doesn't require creaming or whipping, just a bit of a mix and one large bowl, and a small bowl.
You will however need a good square tin that is approx 24cm x 24cm (ish).
🥫Storage
This super yummy brownie recipe keeps pretty well in an airtight container for up to 5 days in a cool place. You can also pop them in the freezer for up to 3 months. Just defrost as needed until room temperature or pop in the oven or microwave for a warm fudgy brownie!
❗Top tip
For the best results and perfectly Fudgy Chocolate Brownies, don't overbake them! Remove them from the oven when some gooey cake batter still attaches itself to your skewer and let them cool completely in their tin.
FAQ
Traditional mincemeat used beef suet combined with dried fruits and spices, however most modern versions are vegan. Check the label if you are not making your own!
A great way to use up leftover fruit mince is to add to brownies or use in a cookie mixture instead of regular dried fruit.

For accuracy, I measure all ingredients in metric as standard, then convert and test the recipe for American cup measurements etc.
(Heads up Aussie and UK readers- your measurements in cups are sometimes different, so please use metric or check you have the correct cup and spoon type!!)
Ingredients
- 240 grams (2 cups) plain (all purpose) flour
- 250 grams (2 cups) brown sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 30 g (4 tablespoon) milled linseed/flaxseed
- 180 ml (12 tablespoon) water (2.5 tablespoons/15ml water to 1 tsbp flax)
- 150 ml (⅗ cups) unsweetened soy milk or oat milk
- 120 ml (½ cups) sunflower or other unflavoured oil
- 1 teaspoon vanilla extract
- 100 grams (½ cups) dark vegan chocolate chips (Plus extra to sprinkle on top. )
- 50 grams (½ cups) unsweetened cocoa powder
- 150 grams (⅔ cups) fruit mincemeat
- 1 teaspoon cinnamon
- 1 teaspoon mixed spice
- 1 teaspoon ground ginger
Instructions
- Preheat oven to 180°C/Gas Mark 4/350°F and line a brownie tin (approx 24cm x 24cm).
- In a large bowl, mix the water into the milled flaxseed. (This creates the vegan 'egg')30 g milled linseed/flaxseed, 180 ml water
- In a large bowl add the sugar, plant milk, oil and vanilla. Whisk until the sugar dissolves then add in the flax seed 'egg'150 ml unsweetened soy milk or oat milk, 120 ml sunflower or other unflavoured oil, 1 teaspoon vanilla extract, 250 grams brown sugar
- Into that bowl, add flour, spices, brown sugar, cocoa, baking powder & salt. Stir well so there are no clumps or lumps of flour240 grams plain (all purpose) flour, 1 teaspoon baking powder, 1 teaspoon salt, 50 grams unsweetened cocoa powder, 1 teaspoon cinnamon, 1 teaspoon mixed spice, 1 teaspoon ground ginger
- Add the choc chips and vegan fruit mincemeat and fold through the batter.100 grams dark vegan chocolate chips, 150 grams fruit mincemeat
- Pour the brownie batter into the lined brownie tin.
- Put into the oven for around half an hour. Check after 25 minutes.
- (Make sure you don't overbake, or the brownie may not be as fudgy and squidgy).
- Allow to cool in the tin for the best fudgy brownie outcome.
- Cut into pieces and share.
