    Let's face it, we just don't have the time for long-winded recipes! We're busy, so we want simple and easy meals that are healthy, filling and totally delicious. This is where our essential list of lazy vegan recipes come in; we've rounded up the best lazy vegan meals and dishes from pasta, vegan cheese and breakfasts, to desserts side dishes and snacks. These easy vegan recipes take less than 30 minutes to prepare, have minimal ingredients and no complicated techniques.

    👩🏾‍🍳Lazy recipe ingredient checklist

    It's always a good idea to have the cupboards stocked with essential vegan and plant based ingredients. So when you're short of time, you can just whip up a vegan meal or snack with whatever you have in the home. Below are some items on our essentials list that you may find helpful to have in your cupboard too:

    • nutritional yeast
    • pasta and noodles
    • nuts
    • soy sauce or tamari (tamari is the gluten free and lower sugar version of soy sauce). If you want a soy free version, use coconut aminos
    • beans (dried or tinned/canned)
    • tofu; firm tofu (from the fridge section) and silken tofu (which is ambient and long-life)
    • vegetable stock

    🍝Pasta recipes

    Pasta is known for its quick cooking time, but sometimes we need ideas for what we can put with our pasta to make it a fun and interesting plant based meal. Here are some lazy vegan pasta recipes that are filling and healthy.

Soups make a great part of your healthy meal prep routine as you can make soup in bulk then freeze it for another time.

    Tray bakes are great healthy meal prep dishes as they're full of complex carbs (like potatoes), beans (which have lots of vegan protein) and other vegetables. They're a great lazy vegan recipe as you chop the vegetables, put everything on a tray, season it then let it bake! These are delicious served with salad and hummus. If you want to try an oil-free version, use these silicone baking sheets - they're the ones I use all the time!
