Sandwiches and wraps are truly quick vegan meals, and great for when you're on the go. We love fillings that are reminiscent of meat and fish sometimes, for example, jackfruit and tofu make great meat replacements! Tray bakes are great healthy meal prep dishes as they're full of complex carbs (like potatoes), beans (which have lots of vegan protein) and other vegetables.
